Every blade in the Takumi Series is cut from the same steel and finished by the same hand, so the knives you choose work as one set rather than a drawer of mismatched tools. Each one pairs a stainless steel cutting core with layers of suminagashi Damascus, hardened for edge retention for an edge that bites clean and holds it through real prep. The blades carry a tsuchime-hammered finish that breaks suction and helps food release off the steel. Handles are turned from dyed stabilized burl wood and resin and set behind a brass wa-style bolster for weight that sits forward in the hand. Choose the blades that match how you actually cook: the Gyuto as the daily chef’s knife for proteins and mise en place; the Kiritsuke as a chef-slicer, its K-tip ground for precise tip work and long clean cuts; the Santoku as the quick all-rounder across meat, fish and vegetable; the Nakiri as the vegetable specialist, its tall flat edge falling straight through onions and squash; and the Petty for close, in-hand work on garlic, shallots and herbs.
